健康な食生活の営みに不可欠な献立作成力を育成するために、小学生を対象とした授業実践と大学生を対象とし た調査から、その指導上の留意点を明らかにすることを目的とした。 \n その結果、小学生には献立作成のエビデンスとなる3つの食品グループの習得が不可欠であること、そのためには児童が作成した献立に対する教師の評価とその提示が重要であることが明らかになった。大学生の調査からは、 献立の食事構成は小学生の学習後と大きな差は見られず、献立作成力は小学生と同程度と推察された。また、献立作成の要素である食品摂取量の学習が充分ではないことが窺え、この学習を扱う中学校及び高等学校の家庭科において、食品摂取量等を含む献立作成力向上のために学習の充実が示唆された。
