菌によるコウジカビ病が知られている。本報では,24種類の果実の果肉から熱水で抽出したペクチン性多糖類に,Aspergillus niger 由来のペクチナーゼを作用させ,その前後の多糖類の分子量分布をゲル濾過によって分析した。得られた溶出パターンの中でピークの変化の程度によって,ペクチン分子のペクチナーゼによる分解の難易を比較した。リンゴ,ウメ,マンゴーではピークの低分子側への変化が大きかったが,アボカド,ドリアン,ブドウ,キーウィー,ビワ,メロン,ライチー,パパイヤ及びランブータンでは変化が小さかった。マンゴーとパパイヤの未熟果と成熟果のペクチン性多糖類のこの酵素による分解性を見たところ,成熟段階に関わらず,マンゴーでは分子量の減少が大きかったが,パパイヤではほとんど変化が見られなかった。ペクチン性多糖類の同一酵素による分解性に差異が生じる原因について,細胞壁多糖の組成や構造の種特異性などの可能性を考察した。","subitem_description_type":"Abstract"}]},"item_5_description_7":{"attribute_name":"引用","attribute_value_mlt":[{"subitem_description":"弘前大学農学生命科学部学術報告.
