Apples"}]},"item_5_biblio_info_8":{"attribute_name":"書誌情報","attribute_value_mlt":[{"bibliographicIssueDates":{"bibliographicIssueDate":"2007-12-28","bibliographicIssueDateType":"Issued"},"bibliographicIssueNumber":"4","bibliographicPageEnd":"38","bibliographicPageStart":"21","bibliographic_titles":[{"bibliographic_title":"弘前大学大学院地域社会研究科年報"}]}]},"item_5_description_17":{"attribute_name":"フォーマット","attribute_value_mlt":[{"subitem_description":"application/pdf","subitem_description_type":"Other"}]},"item_5_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"今日の世界で主流となるりんごの品種は、西アジアのコーカサス山脈地方を原産地として、西の\nヨーロッパ、そこから次にアメリカ、そして後に太平洋を渡って日本などへと伝播し、その過程で\n幾多の選択や改良が積み重ねられてきたものである。但し、それぞれの地域や時代での食用の仕方\nや嗜好の違いなどによって、りんごの消費や需要の歴史的なあり様も異なってきた。例えばヨー\nロッパの中部以北では、りんごを飲用に不向きな生水の代用として酒に醸造したり、肉食との食味\n上の相性や野菜に代わる植物性の食材などとして半ば必需品的に食用してきた。アメリカでは、移\n民を通じてヨーロッパの食習慣を継承しながらも、りんごを生食のほか、ジュースや酢、ジャム、\nソースなど多様な食品へと工業的に加工し、消費、需要してきた。それに対して、日本では、今日\nにおいてりんごの主流となる西洋りんごを近代になってから嗜好品として受け入れ、専ら生食して\nいくようになった。そのため、ヨーロッパやアメリカ、それと同じく西アジアから東回りで在来種\nとして伝播していた日本や中国なども、ともに地球を順次西回りしてくる形で改めて東方からのり\nんごを受け入れていったが、それぞれの地域や時代がもつ歴史的な食文化の差異によって、りんご\nの概念をはじめ、それによるりんごの選択や改良、進化のさせ方、さらに産業としての展開のあり\n様などに違いを生じてきたのである。\n現代における日本とヨーロッパやアメリカ、それに中国などとのりんご産業の競合関係を紐解く\nには、このような消費や需要の歴史的なあり様と特徴の差異についての理解が前もって必要不可欠\nであろう。","subitem_description_type":"Abstract"}]},"item_5_description_7":{"attribute_name":"引用","attribute_value_mlt":[{"subitem_description":"弘前大学大学院地域社会研究科年報.
